By measuring and mathematically modeling changes in the levels of the products of metabolism found in biological fluids and tissues, metabonomics offers a fresh insight into the effects of diet, drugs and disease(Nicholson & Lindon, 2008). This measurement is usually achieved by NMR.Thanks to its speed, low-cost and low invasiveness, metabonomics is a very helpful methodology in many fields of the health care or food industry. The aim of this thesis is twofold. Firstly, the biological variability is assessed and compared with the experimental one when NMR is used.
