Abstract: For many years, Salmonella has been the second most bacterial cause of gastrointestinal diseases in Belgium where the serovar Typhimurium (STM) has been responsible for 49.4% of the reported cases. As this serovar was predominantly isolated from pork, a quantitative microbial risk assessment (QMRA) was developed according to the Codex Alimentarius Priciples to evaluate the health risks associated with the household consumption of fresh minced pork meat contaminated with Salmonella in Belgium. This work was carried out within the METZOON-consortium. The key deliverable of this project was the development of this QMRA allowing to test mitigations. Other deliverables were: (a) development of a methodology to describe the quality of the information and assumptions used to build the QMRA; (b) development and refinement of statistical methodology supporting QMRA's and (c) identification of data gaps and collecting new data to be used in the QMRA.
